We are developing a project for the conservation of Turkey’s wheat varieties such as einkorn with the guidance of one of our Cooperative members who is academically working in the field of ancestral wheat varieties’ conservation. In this context, it is aimed to bring added value to heirloom wheat products with socio-economic studies, to support the continuity of the producers’ agricultural activities and to protect the heirloom varieties in situ.
